Macadamia Anzac Cookies

Here in Australia, you can't go past Anzac Day, without having a few Anzac Biscuits. Well this year I decided I would try something a bit different, and add some yummy macadamia nuts. The results were delicious.


Macadamia Anzac Cookies.
Makes 32

125 grams butter or margarine
2 Tablespoons golden syrup
1/2 teaspoon bi-carb soda
2 Tablespoons boiling water
1 cup rolled oats
1 cup plain flour
1 cup brown sugar (firmly packed)
3/4 cup coconut (I used just over 1/2 cup desiccated, and made the rest up with shredded)
1/2 cup macadamia nuts (finely chopped)

1. Preheat oven to 160 degrees Celsius Fan Forced. Line trays with baking paper.
2. Place margarine / butter and golden syrup in medium saucepan, stir over low heat until smooth.
3. Stir in combined soda and water; then stir in remaining ingredients.
4. Roll Tablespoons of mixture into balls. Place about 5cm apart on trays; flatten slightly.
5. Bake about 15 minutes. Cool on trays.
